- 1 teaspoon Italian seasoning
- Mozzarella
- Sharp cheddar cheese
- Bacon (cook and chop ahead of time)
- Four eggs
- Cracked pepper
- Optional fresh parmesan cheese
Directions:

- Pour your sourdough discard into a cast iron skillet that has been warming up in the oven. Swirl the pan around to evenly spread the sourdough discard around the bottom of the pan.
- Drizzle some olive oil all over the sourdough and sprinkle the salt and Italian seasoning on top. Bake this for about 15 minutes.
- Pull the skillet out and top with mozzarella and sharp cheddar cheese, the cooked and chopped bacon, four cracked eggs, salt, and cracked pepper.
- Return the pan to the oven and cook for an additional 10 minutes or until the eggs are set to your liking,
Allow this to cool for a couple of minutes before digging in! Feel free to get creative and add some fresh parmesan cheese, avocado, cherry tomatoes, bell peppers, hot sauce, or any other ingredients you enjoy. You may need to adjust the cooking time based on your wood fired oven’s temperature and how well you like your eggs done.
