Today we tested out a new recipe that blends savory and sweet flavors in perfect harmony: Blackberry Ricotta Pizza. We baked this in our Infinity 50 hybrid oven and the results were a mouthwatering pizza with the delightful twist of juicy blackberries and creamy ricotta cheese!
Ingredients
- Pizza crust
- 1 tablespoon of olive oil
- 1 small package of blackberries (rinsed and halved)
- 1 cup mozzarella cheese
- 1 cup shredded parmesan cheese
- 1 cup ricotta cheese
- Small bunch of chopped basil leaves
Instructions:
Step 1: Preheat the wood-fired oven
We are going to fire up the pizza oven now since it needs about 30 minutes to reach the temperature we want. If you are using the Infinity 50 or 66, open the gas valve and turn the temperature knob to Pilot and press the igniter button. When it ignites, you can set the temperature to high and then close the door.
Step 2: Prepare dough
Prepare any kind of dough that you would like to use for your pizza. We use our Artisan Style Pizza Dough Mix because it is so simple to prepare and it does not require a lengthy rise time.
Once we have a dough ball ready, we use a floured surface and press it out into a flat cirlce. From the center, press out to the edges making the pizza crust larger. You can leave the edges a little thicker if you like a thicker edge crust, or stretch the pizza dough out to one equal thickness. We are going for a 12” pizza with this recipe! Place the pizza dough onto a floured pizza peel/launch pad.
Step 3: Toppings!
- Drizzle the olive oil over the dough.
- Smash half of your blackberries and spread this over the olive oil.
- Add the mozzarella and parmesan cheese.
- Dollop the ricotta cheese all over.
- Add the rest of your sliced-but-not-smashed black berries!
- Last, add the chopped basil on top.
Step 4: Bake
Once you have all of the toppings on, launch the pizza! Baked in the pizza oven for a minute or two, rotating it half way through. When it is all nice and bubbly, it’s finished!
Serve and enjoy! This Blackberry Ricotta Pizza is a wonderful way to showcase the versatility of wood-fired cooking. The smoky flavor from the oven complements the sweetness of the blackberries and the creaminess of the ricotta.
