Today, we’re diving into a bold, cheesy, smoky masterpiece straight from the fire—Pizza Il Buttsy. This wood-fired creation was made on the Karma 32  WPPO wood-fired oven, but you can make it in any high-heat pizza oven. 

This pizza packs flavor, crunch, and just the right amount of heat. Let’s get started! 

🔥 Gear Up: Lighting Your Wood-Fired Pizza Oven 

To begin, fire up your pizza oven- you’ll need to be about 750°F on the stone for that perfect Neapolitan char. 

Here’s how to fire up a wood pizza oven: 

  1. Stack a few small sticks of hardwood inside the oven. 

  1. Place a fire starter beneath the stack and light it. 

  1. Continue feeding the fire with wood until your pizza stone hits that magic 750°F mark. 

Ingredients: 

  • Pizza dough (makes a 12" thin Neapolitan-style base) 

  • Flour (for dusting your pizza peel) 

  • Alfredo sauce (a thin layer – choose your favorite brand or homemade) 

  • Big Swede BBQ Badass Veggie Boost seasoning (or your favorite veggie-friendly seasoning) 

  • Shredded mozzarella cheese (generous amounts, divided) 

  • Crispy cooked bacon, chopped 

  • Jalapeño ranch dressing 

  • Buttsy’s Truffle Hot Sauce (or a high-quality truffle hot sauce) 

  • Green onions, finely sliced 

 

Step-by-Step Instructions: 

  1. Shape the Dough 
    Stretch your pizza dough into a 12" thin Neapolitan-style round. Use plenty of flour on your pizza peel to prevent sticking. 

  1. Build the Base 
    Spread a thin layer of Alfredo sauce over the dough. This will be your creamy, savory base. 

  1. Season It Up 
    Sprinkle with Big Swede BBQ’s Badass Veggie Boost to enhance the flavors. 

  1. Cheese, Bacon, More Cheese 
    Add a healthy handful of shredded mozzarella. Follow with a generous layer of crispy bacon. Top that off with even more mozzarella. 

  1. Add the Ranch 
    Drizzle jalapeño ranch dressing over the top for a tangy, spicy twist. 

  1. Into the Fire 
    Carefully transfer the pizza into your preheated wood-fired oven. Bake for 2–3 minutes, rotating halfway through for even cooking. 

  1. Finishing Touches 
    Once out of the oven, drench it in Buttsy’s truffle hot sauce—go wild, there’s no such thing as too much here. Finish with a sprinkle of freshly sliced green onions.
