Spinach and Cheese Filled Portobello Mushrooms Baked in a Wood Fired Oven

Today we're going to cook creamy spinach stuffed portobello mushrooms!

Start by firing up your WPPO pizza oven to reach an internal temperature of 450 degrees. To begin, put your cast iron skillet into the pizza oven. Once your skillet is hot, add two tablespoons of butter to melt. 

Next, de-stem the portobello mushrooms and chop them up. Then add some crushed garlic and a little bit of butter to the chopped mushrooms. Add the mixture to the hot skillet and slide the skillet to the back of the pizza oven to saute for approximately three to five minutes.

Once sauteed, add a handful of baby spinach until it's reduced. Remove it from the heat and then stir in approximately three tablespoons of sour cream and set aside.

Then place cleaned, whole portobello mushrooms on a skillet and put approximately a tablespoon of the creamy spinach mixture onto each mushroom.

Finish off with some grated parmesan cheese and some mozzarella cheese. Put this back into the pizza oven to cook for approximately five minutes until golden brown and the cheese is bubbling.
