Sourdough Cinnamon Roll Focaccia

We tried a new recipe this morning, and it was definitely kid—and adult-approved! It's Sourdough Cinnamon Roll Focaccia! Focaccia bread is a delicious, springy bread with a nice crispy top and bottom crust. Add some melted butter with cinnamon on top instead of the usual olive oil, and we are all in! We made this in our Infinity hybrid oven but the recipe could also be made in your indoor oven as well. Keep in mind since we are using sourdough, that you will need to prep the dough the evening before you plan to bake it. Let’s get started! 

Ingredients for Focaccia

  • 50 g active sourdough starter  
  • 220g water  
  • 260g flour  
  • 5g salt  
  • 4 tablespoons melted butter  
  • 1 tablespoon of cinnamon   
  • 2 tablespoons of sugar  

Ingredients for Frosting

  • 2 tablespoons of softened cream cheese  
  • ½ cup powdered sugar  
  • ½ teaspoon of vanilla  
  • 2 tablespoons of milk  

Instructions

 Step One  

Mix your starter, water, flour, and salt in a bowl. Cover it and let it sit for one hour. With wet hands, do a series of stretch and folds at hours one, two, and three. After about four hours, we folded the dough into a buttered 8 x 8-inch pan, covered it, and put it in the fridge for the night!  

Step Two  

 The next morning, we removed the dough from the fridge to let it come to room temperature while we warmed up the pizza oven. We used the WPPO Infinity oven, so we warmed it up on high for about half an hour or until the oven reached 450 degrees.   

Step Three  

 While the oven is heating up, melt the butter and stir in the cinnamon and sugar. Pour over the Focaccia dough. Wet or oil your fingers and then create dimples all over the dough.   

 Step Four  

 When the oven reaches 450 degrees, turn it off and close the damper. Put the pan in the oven and let it cook for 30 minutes with the door closed. Keep an eye on it, and if you feel like it needs a little more heat towards the end, you can turn the flame back on low. This gave our's a nice crispy top! If you are baking in your indoor kitchen oven, bake for 30-35 minutes at 425 degrees.  

 While the bread is baking, whip up a little frosting. Mix the cream cheese, milk, powdered sugar, and vanilla until smooth.    

Step Five  

When the bread is finished cooking take it out of the oven and let it cool for a little bit. It will be hot! Then drizzle the delicious cream cheese frosting over the bread. Slice it up and enjoy! This is amazing right out of the oven while it is nice and toasty, but it is pretty good cold as leftovers, too! Win-win!
